3/4 cup china blue red pepper flakes SAUCE 3 tablespoons chinablue cider splash DRESSING 1 pound flank steak 4 granny smith apples, skin on, julienne 2 fresh jalapenos, julienne 1/4 cup roasted peanuts, salted and chopped 1/4 bunch fresh pea sprouts |
Marinate flank steak in 1/2 cup chinablue red pepper flakes SAUCE 1 hour to overnight. Preheat grill to medium-high. Grill flank steaks, brushing often with red pepper flakes SAUCE until done, 3-4 minutes each side for medium. Remove from heat, cover with remaining 1/4 cup red pepper flakes and let sit 5 minutes. Cut into 1/4 inch slices against the grain and set aside. In mixing bowl, add chinablue cider splash DRESSING to apples. De-seed and julienne jalapenos and add to bowl. Add pea sprouts and gently toss. Mound salad on plates, apples first, then beef, then another layer of apples on top. Garnish with peanuts. Serve warm or at room temperature. |
