Around the World Cooking - Garlic Aioli

This simple Aioli is great with seafood, as a dip or give any sandwich a kick.

Ingredients Directions

2 Garlic Cloves

2 Egg Yolks

2 Tbsp. Lemon Juice

Salt and Pepper to Taste

Dash of Cayenne Pepper

1 Cup Wine Country Kitchens Kettle Roasted Garlic Oil

Mince and mash garlic to a paste with a pinch of salt using a large heavy knife.

Whisk together egg yolks, lemon juice, and garlic in a bowl.

Add Kettle Roasted Garlic Oil a few drops at a time to yolk mixture, whisking constantly, until all oil is incorporated and mixture is emulsified.

Whisk in cayenne pepper and season with salt and pepper.

If aioli is too thick, whisk in 1 to 2 drops of water.

Chill, covered, until ready to use.
