Around the World Cooking - Grilled Vegetables

This recipe makes it easy to eat your vegetables. Great addition to any BBQ.

Serves 4-6

Ingredients Directions

3 Tbsp. Bone Suckin' Rib Rub

1 Stick Butter

1 Red Onion, sliced into 3/4 inch wide rings

1 White Onion, sliced into 3/4 inch wide rings

1 Red Bell Pepper, seeded and quartered

1 Yellow Bell Pepper, seeded and quartered

4 Roma Tomatoes, whole

1 Bunch Apsaragus, cut 2 inches off bottom

Preheat grill to high, no flames.

Pile all the vegetables onto grill.

Places slices of butter on onions and apsparagus.

The skins of the tomatoes and the bell peppers will start to char, this is a good thing.

Sprinkle Bone Suckin' Rib Rub over vegetables.

Watch vegetables and make sure they don't burn. Stirring and flipping occasionally.

Grill for about 15-20 minutes or until done.
