Whup Asp is our latest creation. It's asparagus in a brine infused with white wine vinegar, pink peppercorns, hot cherry peppers and orange juice. Its a snappy addition to an antipasto platter and provides a fine florish to a martini. You'll find the brine itself makes a piquant salad dressing in its own right when the asparagus is finished. The asparagus comes to us from farmer Kurt Alstede of Chester, New Jersey. We were fortunate to meet Kurt at the end of May, just as the local asparagus season was winding down. So now the Stalk of Spring can be enjoyed as the leaves fall!
