Fresh Fish from Cape Town

Good food. That’s the thing I enjoy most about traveling to other countries. There is something about good food that brings people together no matter their walks of life or backgrounds. During our trip in Cape Town, Terrell and I had dinner with a group of our friends. Chris and Nitra had been on the entire trip with us and Jeffery and Harriet had met us in South Africa. It was a hot day with no air conditioning. We were hungry when we arrived at our Airbnb’s hosts home and were eager to explore the dishes Cape Town had to offer. Terrell and I usually eat out while we travel, but the great thing about Airbnb homes is they give you the ability to create your own masterpiece inspired by the local foods and culture. After seeing the kitchen and realizing how close our home was to the water, I decided fresh fish had to be one of the items on the menu. We hit the supermarket up and within a few hours, dinner was served. It may look simple now, but trust me, between maneuvering through a new kitchen and dealing with the heat–This dish was an experience and a half.

What you will Need:

  • Black Pepper and Salt
  • Aroma Seasoning (picture below; possible substitute- all purpose seasoning(
  • Thoroughly cleaned fish (I used Red Snapper- try to stay away from Tilapia)
  • Spice for Fish (any seasoning that is specifically for fish will do- can use goya seasoning)

How to Make It:

  • Place cleaned and washed fish on a flat surface (placing it directly in ziploc/plastic bag is also an option). Make sure there is no water dripping. I usually use a paper towel to pat down the fish on both sides before I start to season.
  • Add a generous amount of seasoning on each side as well as inside your fish (for best results use your hands) and gently massage the fish to ensure there is enough seasoning to penetrate through–For best results, season overnight and let sit.
  • Place your fish in a ziploc and let sit overnight or a few hours depending on when you plan to cook it ( I seasoned mine and cooked within two hours. It tasted like it had sat overnight- The freshness probably had a lot to do with this)
  • When ready to cook, preheat at 375F/190C rub olive oil on a aluminum foil paper and place fish with aluminum foil directly on the oven rack, let cook for 25-30 minutes. Once the fish appears to be almost fully cooked, place the top rack in the oven and increase heat to 425F/218C. This will help brown the fish. Watch closely to make sure fish does not overcook or before too browned.
